In the Philippines cassava cake is one of the most popular and enjoyed home made delicacies or Kakanin. Made from grated cassava (Kamoteng Kahoy), the root crop is mixed with coconut milk, eggs, butter and topped with a creamy milk mixture. It is also called cassava bibingka.

- 2 Grated cassava packages (frozen section)
- 1 cup evaporated milk
- ½ cup fresh milk
- 6 eggs
- 1 cups sugar
- 1 stick butter, melted
- 1 can coconut milk
- ½ cup grated cheese
- 2 tsp vanilla extract
- optional: 1 jar macapuno string
Directions
- Mix all ingredients in a large bowl
- Transfer into pan
- Bake for 1.5 hours at 350°F
- Poke with toothpick to see if it is done (the toothpick should come out completely clean) around the 40 minute mark
- Top with macapuno strings before broiling
- Broil for 3-5 minutes to brown top layer
- Remove from oven
